In times of yore bags of granulated sugar were not available, Pure Maple Sugar was the sweetener of choice for the colonists. Maple syrup is heated to 265 degrees and then cooled and stirred constantly until 95% of the water is gone and then like magic it granulates or graduates into sugar with a strong and beautiful maple flavor. This is good on everything!
